| Derived from Pinot Nero
grapes macerated at a low temperature until
the must takes on a tenuous pink color. Production
of a sparkling wine from Pinot Nero with the
use of the classic method is one of the most
difficult and unpredictable of operations because
of the variety’s special characteristics.
It yields difficult and aggressive wines but,
once it has been tamed, it offers great fragrance
and a complexity of aromas that is seldom found
in other varieties. The vineyards are perched
on hills at an altitude of 300 meters (984 ft.)
and their production per hectare is extremely
low.
Color: pink with violet shadings;
aging attenuates the color. The perlage is fine,
abundant and constant
Bouquet: Intense with delicate
hints of yeasts, ethereal and persistent scents
Flavor: full, rich, sapid,
balanced, slightly bitterish, velvety and vivacious
at the same time. It is a sparkler with a broad
range of aroma-flavor expressions. Stimulate
the senses with small but repeated sips to discern
one by one all the sensations offered for the
taster’s pleasure
