| The wine pays homage to
founder Eliseo Bisol, who was born in 1855.
After 140 years, it seemed entirely fitting
to honor his memory today by presenting the
best of our production of Spumante Classico
under the name Eliseo. In those 140 years, the
house has consolidated its tradition, which
was perpetuated by Desiderio, Eliseo Bisol’s
son, who also restored the establishment after
the heavy destruction of World War I.
The grapes that provide this cuvée consist
of an exceptional assortment of Pinot Nero,
Pinot Bianco and Chardonnay grown in selected
vineyards in the upper hills. Extremely slow
fermentation with carefully selected yeasts,
prolonged maturation at a constant temperature
of 12 degrees C. (54° F.) in the darkness
of the cellar and, in particular, the diligent
selection of the mixture for the liqueur d’expédition
have yielded a cuvée that ranks at the
peak of the Bisol Spumante Classico line.

in combination with a pleasant, lightly accentuated
softness, confers on this Talento a complexity
that satisfies the palate in a unique way
