themselves, from vineyards bounded only by the
starry sky and alive with flocks of pheasants.”
That is the way Andrea Zanzotto described the
“uniqueness of this terroir.” Rolle
is its name and it is the heart of the confined
zone where this celebrated Prosecco Passito
is made and where the evolution of the drying
grapes is attentively followed. An area where
the particularly mild microclimate perfectly
complements an extremely ancient terrain. Rocky
deep down but crumbly on the surface, this fine
soil has a balanced chemical composition and
constant moisture so that it yields grapes that
ripen slowly, very slowly.
Color: an intense golden yellow,
whose consistency can be appreciated by rotating
the wine in the goblet. The intensity and consistency
of the “tears” indicate a marvelous
stock of alcohol.
Bouquet: extraordinarily intense.
Scents of ripe exotic fruit stand out in a natural
aromatic complexity enhanced by notes of honey
and acacia derived from the Prosecco and scrupulously
preserved over time to render the sweetness
of the Passito more complex.
Flavor: sapid and full with
emerging delicate scents of cherries and ripe
medlars. The softness and richness of extracts
are vivacious and light at the same time. The
sensation of aromatic sweetness is attenuated
by the refreshing and spirited acidity that
always increases the pleasure experienced on
the palate.
