| Eliseo Bisol,
a noted distiller of the late 19th century,
transferred ownership of his distillery, which
had been partly destroyed in World War I, to
his son Desiderio by notarial deed No. 4535,
signed on September 4, 1942.
This grappa, dedicated to Eliseo, was created
as a fitting way of commemorating an activity
honorably carried on by the family in the 19th
century.
The pomace is obtained from grapes we selected
in our finest vineyards located in the heart
of the Cartizze zone. The skins were in contact
with the must for 14 hours at a low temperature.
Pressing was extremely soft so that the pomace
would be moist with must. To exalt the quality,
the grappa was subjected to a double distillation.
Production is limited to about 2,000
bottles annually.
