| The area where the grapes
used in the production of this semi-sparkling
wine are grown is situated in the hills around
Santo Stefano. There, physical-climatic conditions,
including a soil consisting largely of clay,
prolonged sunshine in summer and substantial
differences in day and night temperatures, assure
attainment of superior quality and give the
wine its typical characteristics. Vineyard and
winery techniques, based on strong dedication
to the land, are deliberately confined to natural
practices that emphasize typical features.
The estate has adopted use of organic fertilizers,
limited application of anti-parasite products,
selects the grapes in the field on the basis
of their wholesomeness and extracts 55% of the
“flower must” during processing.
The must obtained is characterized by an elevated
sugar level, sustained acidity and a stock of
fine and velvety polyphenols. The successive
process of developing effervescence is a craft
focused on the maintenance and exaltation of
the original quality of the fruit.
Color: straw yellow with brilliant
greenish reflections.
Perlage: fine, persistent and
lively.
Aroma: refined, delicate and
elegant, a bouquet featuring an ensemble of
pleasantly fruity sensations.
Flavor: typical of Prosecco
grown in the hills, offers hints of fruit and
pomace. It is harmonious with a pleasantly bitterish
aftertaste of apples.
